Costelinha Suína ao molho barbecue

Ingredientes:
2 kg de costelinha suína / Uma colher de sopa de sal / 4 litros de água / Uma colher de sopa óleo / Duas colheres de sopa cebola picada / Meia xícara de chá de açúcar mascavo / Meia xícara de chá de vinagre branco / Duas colheres de sopa de molho inglês / Duas xícaras de chá de catchup / Uma folha de louro / Uma colher de sopa de chilli em pó / Meia xícara de chá água / Sal e pimenta-do-reino a gosto

2 kg of pork ribs / 1 tablespoon of salt / 4 liters of Waters / 1 tablespoon of oil / 2 tablespoons of chopped onions / Half a teacup of brown sugar / Half a teacup of white vinegar / 2 tablespoons of Worcestershire sauce / 2 teacups of ketchup / 1 bay leaf / 1 tablespoon of chilli powder / Half a teacup of water / Salt and black pepper to taste

Modo de preparo da carne

(1.) Espalhe o sal por toda a carne e coloque para ferver por 10 minutos em uma panela com a água quente. (2.) Escorra a água, arrume as costelinhas em uma assadeira, cubra com papel alumínio e leve ao forno em temperatura de 180°C por 40 minutos.

Meat preparation steps

(1.) Spread salt over the whole meat and boil it for 10 minutes in a pan with hot water. (2.) Drain the water, assemble the ribs in a baking dish, cover with aluminum foil and take it to the oven at 180ºC for 40 minutes.

Modo de preparo do molho

(1.) Em uma panela, refogue a cebola no óleo, acrescente o açúcar mascavo, o vinagre e deixe o açúcar dissolver. (2.) Acrescente o molho inglês, o catchup, o louro, o chilli em pó, a água e cozinhe por 30 minutos em fogo baixo ou até o molho engrossar. (3.) Tempere com sal e pimenta-do-reino, coe e reserve. (4.) Após 40 minutos, retire as costelinhas do forno, retire o papel alumínio e pincele com o molho. (5.) Aumente a temperatura do forno, asse as costelinhas por mais 10 minutos. Pincele novamente com o molho, asse mais 5 minutos e repita mais uma vez esta operação. (6.) Sirva com mais molho à parte.

Sauce preparation steps

(1.) In a pan, braise the onions in oil, add the brown sugar, the vinegar and let the sugar dissolve. (2.) Add the Worcestershire sauce, the ketchup, the bay, the chilli powder, the water and cook for 30 minutes on low heat or until the sauce thickens up. (3.) Season with salt and black pepper, strain and put it aside. (4.) After 40 minutes, remove the ribs from the oven, remove the aluminum foil and brush with the sauce. (5.) Rise the oven’s temperature, bake the ribs for 10 more minutes. Brush again with the sauce, and repeat once again the operation. (6.) Serve them together with the sauce.
